What is Jian Bing?

Jian Bing is a traditional Chinese savory street food similar to crêpes. It is hailed as one of China’s most popular street breakfasts.

The base of Jian Bing is mung bean batter with eggs, sprinkled with spring onions and black sesame. It wraps deep fried crisps, sweet bean paste and other toppings.

Jian Bing tastes like crêpe and omelette having a baby!

The unique balance between the eggy softness and deep fired crispiness, together with the silky & flavourful sauce, it’s truly heartwarming comfort food.

Why Bring-Your-Own-Eggs?

Back in the days…

eggs are still very expensive for Chinese people. But some families may have hens in their backyard. In the morning,
the hens lay very fresh eggs,
and people bring them to the
Jian Bing stand to save money.

Queuing with eggs

is another tradition. Making Jian Bing takes time, so customers use their eggs to queue, while they go buy other food, or hide somewhere warmer in the winter time.

This tradition only exists in Tianjin, but now you can bring your own eggs in Berlin too ! At Jian Bing Town, we keep this cute tradition. Bringing your own eggs
to get 1€ discount and
a happy high-five 🙂

Why is Jian Bing green?

Because authentic Tianjin-style Jian Bing is made from green mung beans.

Mung beans

Well to be fair, at some places, it’s also common to replace mung beans with wheat flour.
It’s cheaper and requires much less work. But in Tianjin, where Jian Bing originally comes from, we insist to use mung beans.

At Jian Bing Town, we of course use mung beans to make Jian Bing ! The unique aroma of iron plate griddled mung bean batter is simply irreplaceable and irresistible, and totally makes the extra efforts worthwhile 🙂
